How To Prepare Ritz Carlton Lemon Pound Cake Recipe?


  • 4 cups all-purpose flour
  • 4 cups sugar
  • 3 large eggs
  • 1 Tbsp baking powder
  • 8 Tbsp lemon juice
  • 2 lemon, zested
  • ¾ tsp salt
  • 2 cup unsalted butter, room temperature
  • ½ cup shortening, room temperature
  • 2 cup whole milk


Step 1: Preheat oven to 350°F. Grease 2-9×5 inch loaf pans with pan spray.

Step 2: For the icing: In a small bowl, combine egg whites, cream of tartar and salt. Beat on high speed until soft peaks form; add sugar 1 tablespoon at a time while beating on medium-high speed until stiff peaks form; set aside.

Step 3: Combine flour and ¾ cup of sugar in a large bowl.

Step 4: In a separate bowl, beat the eggs, remaining sugar and salt on medium-high speed for about 2 minutes.

Step 5: Add lemon juice, butter and shortening in that order.

Step 6: Add the flour mixture to the wet ingredients with a hand mixer and combine. Add ½ cup of milk; gently fold into batter just until incorporated.

Step 7: Divide batter evenly between prepared pans. Bake for 45-50 minutes or until a toothpick inserted comes out clean.

Step 8: Let the cake cool for about 10 minutes. Remove from pans, and let cool completely.

Step 9: Make icing by beating egg whites, salt and cream of tartar on medium speed until soft peaks form.

Step 10: Add sugar 1 tablespoon at a time while beating on high-speed until stiff peaks form.

Step 11: Place first loaf of cake on cake plate; spread half of the icing on top. Place remaining loaf of cake on top and cover with rest of icing.

Step 12: Place a generous amount of icing on top and sprinkle with lemon zest.

Step 13: Slice and serve.
