  • 1 1/2 teaspoons baking powder
  • 4 cups sifted cake flour for dry
  • 4 large egg whites at room temperature (separated)
  • 1 1/2 teaspoons cream of tartar

Making Method

Step 1: Preheat the oven to 350°F. Use an electric mixer on low speed, and cream butter until fluffy and pale yellow.

Step 2: Add sugar to the bowl of an electric mixer, and beat until fluffy and pale yellow, about 5 minutes.

Step 3: Add egg whites one at a time while beating.

Step 4: Butter a 9-inch round baking pan and cover the bottom with flour. Tap out excess flour on a piece of wax paper or parchment paper. Spray the pan with cooking spray.

Step 5: Sift the flour and baking powder three times into your bowl. Mix well after each addition.

Step 6: Add egg whites, vanilla, and salt to the butter-sugar mixture alternating three times with the flour mixture, ending and starting with the flour. Beat until batter is smooth after each addition of egg whites.

Step 7: Pour batter into prepared pan and bake for 20 minutes at 350°F.

Step 8: Reduce the heat to 325°F and bake for 15 minutes.

Step 9: Cool in pan on rack for 10 minutes.

Step 10: Run a knife around the edge of the cake and turn the cake out onto a cooling rack. Cool completely.

Step 11: To make nicks butter frosting, use an electric mixer to beat cream until stiff peaks form. Fold in confectioners’ sugar, vanilla, and salt into the whipped cream mixture. Spread frosting on the cooled cake using an icing spatula or knife.
